Ingredients:
- 2 cups mashed potatoes
- 1 egg
- 1/4 cup grated Parmesan Cheese
- sea salt
- black pepper
- 1 tsp. canola oil
Directions:
- heat the oil in a non-stick skillet on medium-high
- mix all ingredients well
- drop spoonfuls of mixture into the skillet and flatten each with a spatula
- cook until golden brown - about 3 minutes on each side
makes 6 pancakes
