Tuna Pasta Salad:


Ingredients:

  • 4 cups pasta of your choice
  • 4 tbsp. olive oil
  • sea salt
  • black pepper
  • lemon juice
  • 30 cherry tomatoes, cut in half
  • 2 stalks celery, diced small
  • 1 can (12 oz.) chunk white albacore tuna (packed in water - no other ingredients)
  • 1/2 cup grated cheese (Parmesan, Romano, Reggiano or a mixture)
  • 2 hard-cooked eggs and shredded or diced

Directions:

  • Cook the pasta according to the package - drain and place in a large bowl
  • Add the olive oil
  • Season to taste with salt, pepper and lemon juice
  • Drain the tuna and add to the bowl
  • Add cheese and mix well
  • Chill


This actually gets better in a couple days - good leftovers
