Fresh Asparagus Salad

Ingredients:

  • 1/2 pound diced asparagus (cut 1/2 inch off ends first)
  • 1/4 cup diced purple onion
  • 1/4 tsp sea salt
  • 1 hard-boiled egg diced
  • 1/4 cup olive oil
  • 1/4 tsp. lemon juice

Directions:

  1. mix well
  2. serve cold

Vinaigrette can be used instead of olive oil
