- 1/2 pound diced asparagus (cut 1/2 inch off ends first)
- 1/4 cup diced purple onion
- 1/4 tsp sea salt
- 1 hard-boiled egg diced
- 1/4 cup olive oil
- 1/4 tsp. lemon juice
Directions:
- mix well
- serve cold
Vinaigrette can be used instead of olive oil
