California Egg Bake

Rarely do I follow a recipe directly, but this is one of the exceptions.

California Egg Bake

Ingredients:

  • 3 eggs
  • 1/4 cup sour cream
  • 1/4 tsp. sea salt
  • 1 medium tomato, chopped
  • 1 green onion, sliced
  • 1/4 cup shredded cheddar cheese
Directions:
  1. Beat the eggs, sour cream and salt
  2. Stir in the tomato, onion and cheese
  3. Mix well and pour into a greased baking dish
  4. Bake, uncovered, at 350 degrees for 25-30 minutes
2 servings

I might add more green onion next time. I was out of shredded cheddar, so I used a Mexican mixture of cheeses. A little pepper would not hurt, but this is very good with no changes.
