- 1 head cauliflower, cut into medium florets
- 1 tbsp. olive oil
- sea salt
- black pepper
- 1 cup shredded cheese - cheddar, mixed Italian or your choice
Directions:
- Pre-heat oven to 450 degrees
- Toss cauliflower with olive oil to coat well
- Place cauliflower in single layer on cooking sheet
- Add salt and pepper to taste
- Cook about 20 minutes, tossing halfway through
- Push all cauliflower into the center of the cooking sheet and top with cheese
- Cook about 2 minutes to melt the cheese
