Roasted Cauliflower w/cheese

Ingredients:

  • 1 head cauliflower, cut into medium florets
  • 1 tbsp. olive oil
  • sea salt
  • black pepper
  • 1 cup shredded cheese - cheddar, mixed Italian or your choice
Directions:
  1. Pre-heat oven to 450 degrees
  2. Toss cauliflower with olive oil to coat well
  3. Place cauliflower in single layer on cooking sheet
  4. Add salt and pepper to taste
  5. Cook about 20 minutes, tossing halfway through
  6. Push all cauliflower into the center of the cooking sheet and top with cheese
  7. Cook about 2 minutes to melt the cheese
