Ingredients:
- organic sweet potatoes, cut into 1 inch wedges
- 1/3 cup brown sugar
- 2 tbsp. bourbon
- sea salt
- black pepper
Directions:
- Place the potatoes into a glass baking dish.
- Add 1/3 cup brown sugar and 2 tablespoons bourbon.
- Season with sea salt and black pepper and toss to coat all of the potato wedges.
- Bake on 400 until slightly tender and glazed - about 1 to 1-1/2 hours.
- Toss every 20-30 minutes to keep the bourbon and sugar coating even.
- If desired, you can stir in 2-3 tablespoons of room temperature butter when serving.
