Asparagus frico
Ingredients:
- 6-8 spears of asparagus, trimmed
- 1 1/2 cups Parmigiano-Reggiano cheese, shredded
- olive oil
- black pepper
Directions:
- Preheat oven to 400
- Arrange asparagus in an asymmetrical pattern leaving an inch between each spear
- Sprinkle cheese over each spear, leaving the tips uncovered
- Brush the tips with olive oil and sprinkle all with pepper
- Bake until bubbly - about 6-7 minutes
- Remove from oven and let cool until frico crisps
