Chicken with Lemon Caper Sauce

Ingredients:

  • 2 skinless boneless chicken breasts
  • 1 1/2 tbsp. olive oil
  • 1 1/2 tbsp. butter
  • enough flour to coat chicken
  • sea salt
  • black pepper

Directions:

  1. 1. wash chicken and pat dry.
  2. 2. add salt and pepper to taste, then coat with flour
  3. 3. heat olive oil and butter in skillet
  4. 4. cook chicken on medium heat until golden brown on both sides
  5. 5. remove chicken and place in oven to keep warm

Sauce Ingredients:

  • 1 cup chicken broth
  • 1/4 cup lemon juice
  • 2 tbsp. capers
  • 3 tbsp. butter

Finishing Directions:

  1. slowly add chicken broth to skillet to deglaze
  2. add remaining ingredients and blend a few minutes
  3. add chicken to the sauce and continue to cook about 4-5 minutes spooning sauce over the chicken

Serve
