- 2 skinless boneless chicken breasts
- 1 1/2 tbsp. olive oil
- 1 1/2 tbsp. butter
- enough flour to coat chicken
- sea salt
- black pepper
Directions:
- 1. wash chicken and pat dry.
- 2. add salt and pepper to taste, then coat with flour
- 3. heat olive oil and butter in skillet
- 4. cook chicken on medium heat until golden brown on both sides
- 5. remove chicken and place in oven to keep warm
Sauce Ingredients:
- 1 cup chicken broth
- 1/4 cup lemon juice
- 2 tbsp. capers
- 3 tbsp. butter
Finishing Directions:
- slowly add chicken broth to skillet to deglaze
- add remaining ingredients and blend a few minutes
- add chicken to the sauce and continue to cook about 4-5 minutes spooning sauce over the chicken
