Ingredients:
- 1 tbsp. olive oil
- 2 tsp. fresh lemon juice
- 1 egg
- 1/4 tsp. Dijon mustard
- 3 cups oil (peanut preferred, or canola)
Directions
- Whisk together olive oil, lemon juice and mustard
- Crack egg into a bowl or cup
- Pour oil into a heavy saucepan
- Heat oil to 350
- Gently tip the egg from the cup into the oil (may puff and splatter)
- After 40 seconds, turn the egg ball
- Fry 10 more seconds or longer according to your taste
- Scoop egg with slotted spoon
- Season with salt and pepper
